1/2 tsp ground cardamom

2 tsp garam marsala (Note 2)

2 tsp coriander

1 tbsp cumin

2 tbsp paprika , sweet/ordinary (not smoked)

1 3/4 tsp salt


2 tbsp salt

10 cloves

5 dried strait leaves

1 star anise

6 green cardamon cases

2 1/4 cups/450g basmati rice (Note 3)

Crisp ONIONS (NOTE 4):

2 medium onions (yellow, darker) , split and finely cut

1 cup/250 ml oil , for carmelizing


1 tsp saffron strings (inaccurately stuffed) (Note 5)

2 tbsp warm water


1 cup coriander/cilantro , sliced

60 g/1/4 cup ghee or unsalted margarine , broke down (Note 6)


New onions (above)

Sliced coriander/cilantro

Yogurt (Note 7)



24509492452_efbab416c0_z1. Make a mix with tomato yogurt, puree, green stew stick, ginger garlic stick, red bean stew powder, cooked cumin powder, turmeric powder, garam masala powder, coriander powder and salt.

2. Take the chicken and marinade it in a comparative mix. Allow it to rest for 3-4 hours.

3. Put oil in a skillet, heat it and fry onions till they turn splendid darker.
