2 tsp finely ground fresh ginger
1/8 tsp ground turmeric
1/4 tsp cinnamon
1/2 tsp cayenne (adjust warmth to taste)
1/2 tsp ground cardamom
2 tsp garam marsala (Note 2)
2 tsp coriander
1 tbsp cumin
2 tbsp paprika , sweet/ordinary (not smoked)
1 3/4 tsp salt
Standard BOILED RICE:
2 tbsp salt
5 dried strait leaves
1 star anise
6 green cardamon cases
2 1/4 cups/450g basmati rice (Note 3)
Crisp ONIONS (NOTE 4):
2 medium onions (yellow, darker) , split and finely cut
1 cup/250 ml oil , for carmelizing
1 tsp saffron strings (inaccurately stuffed) (Note 5)
2 tbsp warm water
1 cup coriander/cilantro , sliced
60 g/1/4 cup ghee or unsalted margarine , broke down (Note 6)
New onions (above)
Yogurt (Note 7)
1. Make a mix with tomato yogurt, puree, green stew stick, ginger garlic stick, red bean stew powder, cooked cumin powder, turmeric powder, garam masala powder, coriander powder and salt.
2. Take the chicken and marinade it in a comparative mix. Allow it to rest for 3-4 hours.
3. Put oil in a skillet, heat it and fry onions till they turn splendid darker.
4. Directly, to this incorporate the marinated chicken and cook the entire mix for 10 mints.
5. After that in a weight cooker, take the rice and incorporate 3 1/2 cups of water to it. Moreover, take the saffron, mix in with the milk and add to the rice.
6. At last, incorporate the cardamom powder and the chicken pieces, nearby the marinade.
